The Japan Foundation organizes a lecture demonstration, given by selected culinary experts of Niigata’s local specialties. Niigata Prefecture is one of the cities in Japan ranking at the top in amount of rice production and quality of the famous koshihikari variety of rice.

At this event, they begin with a lecture explaining the rice-based culinary culture including the history of rice production and smart eating habits of Japanese people. They also introduce traditional recipes made with local and seasonal ingredients. Following the lecture, they present the cooking demonstration on regional dishes and Japanese confectionary made with Niigata rice.
